Chef Angelo Brings a New Taste to Coconut Bay

Coconut Bay Beach Resort & Spa is known for its extensive dining options. With choices that range from the signature Silk and Calabash restaurants to the casual Caribbean flavours of The Jerk Treehouse, there’s a dining experience for everyone at our resort. One of the newest additions to our resort is Executive Chef Angelo Konidis, who’s poised to bring a fresh and innovative approach to the dining experience in all of our restaurants.

A Tradition of Culinary Brilliance

Chef Angelo’s culinary history spans nearly his entire life. He got his first inspiration from his father, who was also a chef. Angelo attended the French Culinary Academy and graduated with a Bachelor’s in Culinary Arts. “I’ve been in the food business pretty much all my life,” he says of his extensive background.

Chef Angelo has worked in several resorts and restaurants including the Wyndham Rose Hall, Hilton Santa Clara, and two Jamaican resorts. One of these resorts was ranked fifth in the Caribbean for the best food among both inclusive and non-inclusive resorts. Last December, Chef Angelo accepted the invitation to bring his culinary expertise to the team at Coconut Bay.

Fresh Picks on an Innovative Menu

Chef Angelo emphasizes fresh, local cuisine on all his menus. He added exclusive fresh produce to the Coconut Walk buffet and updated the salad bar so guests won’t find anything that comes frozen or from a can. Coconut Walk was one of his first improvement projects, since many of the resort’s guests dine in Coconut Walk for sometimes three meals per day. Angelo sources marlin, snapper, and tuna from local fisherman and gets chicken and pork from farmers on the island. Many additional ingredients are grown in the on-site greenhouses or purchased from local farmers.

Exciting Goals for the Future

Moving forward, Chef Angelo’s goal is to position our resorts to be “recognized as one of the top resorts in the Caribbean for our food and beverage offerings.” He encourages everyone on his team to come to work to inspire taste buds and wow our guests. He is leading the effort with the innovative dishes adding to and changing our menus. Dedicated to educating his whole team to provide outstanding culinary experiences, Chef Angelo is poised to dramatically change the dining experience for every visitor to Coconut Bay.
